Baked ziti with mozzarella is weeknight comfort that still feels like a proper dinner. Undercook the pasta by 2 minutes so it does not turn soft in the oven. Sauce should look a little loose when you assemble; pasta drinks liquid as it bakes. I ran out of sauce once and the pan came out dry and sad. Ricotta pockets keep bites creamy between the tomato layers. Use low-moisture mozzarella if you can find it; fresh mozzarella releases water and can make the top soggy. Cover for the first half of baking, then uncover to brown. Let it sit 10 minutes after it leaves the oven. Cutting too early gives you a lava slide, not neat squares.
