   Season The Chicken** In a bowl, toss the shredded chicken with cumin, chili powder, salt, green onions, and salsa until coated.

   Assemble The Quesadillas

   Lay out 4 tortillas. Divide the chicken and cheese among them, keeping fillings away from the very edges. Top with the remaining tortillas and press lightly.

   Heat The Pan

   Melt a little butter with a drizzle of oil in a large skillet over medium heat. You want steady heat, not smoking hot.

   Cook The First Side

   Place one quesadilla in the pan. Cook 2 to 3 minutes until the underside is golden and the cheese starts melting.

   Flip Carefully

   Flip with a wide spatula. Cook another 2 to 3 minutes until crisp and the cheese is fully melted. Repeat with the rest, adding butter as needed.

   Slice And Serve

   Rest 1 minute on a cutting board, then cut into wedges. Serve with extra salsa or sour cream if you like.
