Classic Fish and Chips
By Jordan Lee ·
Proper fish and chips is about hot oil, a light batter, and potatoes that stay fluffy inside. I fry the chips in two stages so they crisp without going greasy, and I keep the batter ice-cold so it puffs instead of sogging. Cod or haddock both work; just pat the fillets dry or the coating slides off. Have your lemon wedges and salt ready before the fish comes out, because this waits for no one.
