Easy Tandoori Chicken
By Jordan Lee ·
Easy tandoori chicken at home won't taste exactly like the dhaba version straight out of a clay oven. Your oven doesn't go to 400°C. But it gets surprisingly close if you follow a few rules. Use bone-in legs, skin off, slashed deep to the bone. Marinate twice, first with lemon, salt and chili, then in thick hung curd with mustard oil. Leave it overnight if you can. And turn the oven up as high as it goes, then finish under the grill for the charred bits. The red colour here comes from Kashmiri chili, not food colouring. It's more of a deep orange red, and that's fine.
