Why this works

Sautéing the onions until golden brown creates a deep, caramelized flavor base that balances the acidity of the tomatoes. Soaking store-bought paneer in warm water prevents it from becoming rubbery. Tips & Substitutions - If using store-bought paneer, soak the cubed paneer in warm water for 10 to 15 minutes before cooking to make it tender. - Frozen peas work wonderfully in this dish; simply rinse them under warm water before adding to the pan. - For a richer gravy, substitute the heavy cream with 2 tablespoons of cashew paste. Storage & Reheating Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of water to thin out the gravy if it has thickened.
