Easy Chicken Caesar Salad
By Jordan Lee ·
Easy chicken Caesar salad is my answer when I want something cold and filling and do not feel like pasta. I sear the chicken first so it has a browned edge, then let it rest while I toss the greens. The dressing is lemony and sharp; I use less anchovy than some recipes because my kids notice. Dry the romaine well or the salad goes watery in five minutes. Croutons last if you add them at the table. Leftover chicken from last night works too, no judgment.
