Easy Crumpets
By Jordan Lee ·
Easy crumpets are one of those things people assume only come in a plastic packet. They don't. You need flour, yeast, warm water and a frying pan, plus a few metal rings. The batter is thin, more like thick cream than dough. It bubbles away for an hour, then a little bicarb goes in right before cooking and that is what gives you all those holes on top. My first ones were gummy in the middle because the pan was too hot. Low and slow is the whole game. Toast them the next morning and the butter runs straight through.
