Soft Poori
By Jordan Lee ·
Soft poori is Sunday breakfast in a lot of North Indian homes, usually with a bowl of aloo sabzi and someone in the kitchen frying them one by one while everyone else eats. The dough is the part people get wrong. It has to be stiff, much firmer than roti dough. A soft, sticky dough drinks oil and the pooris come out greasy and flat. Roll them evenly, not thin at the edges and thick in the middle, and use a few drops of oil on the board instead of dry flour. Dry flour falls into the kadai, burns, and turns the oil dark and bitter. Get the oil properly hot and they puff in seconds. That's the fun part.
