Soft Medu Vada
By Jordan Lee ·
Soft medu vada is the doughnut of South Indian breakfasts, and I chase that contrast every time. Crisp shell, soft almost spongy middle, only if you soak the urad dal long enough or the grind stays gritty. I grind thick, not watery, and whip the batter by hand until it looks pale and airy. Wet hands shape the hole without sticky mess. Oil has to be hot enough that a tiny drop of batter rises at once, or they soak oil. Coconut chutney on the side, always.
