Easy Pad Thai
By Jordan Lee ·
Easy pad Thai at home is all about mise en place. Once the noodles hit the pan, you have almost no time to dig for fish sauce. Soak rice noodles until pliable but not mushy; oversoaked strands break and turn gummy. I burned the sauce once by cooking it alone too long on high heat. Mix it cold in a jar, then pour it in near the end. The pan should be hot enough that eggs scramble in seconds. Shrimp or tofu both work; just do not overload the wok. Thai-style pad Thai balances sweet, sour, and salty. Taste the sauce before it hits the noodles. Adjust with more lime or a pinch of sugar if it feels off.
