Easy Vada Pav
By Jordan Lee ·
Easy vada pav is the Mumbai street snack: a spiced potato ball dipped in gram flour batter, fried, and stuffed into a soft pav with chutneys. Honestly the dry garlic chutney matters as much as the vada. It's red, coarse and fiery, and without it the whole thing tastes a bit flat. The filling should be roughly mashed, not smooth, with lots of garlic and green chili. A little rice flour in the batter keeps it crisp. One more thing the stalls do: they scoop out the little fried bits of batter, the chura, and sprinkle them in the pav. Do that. And fry a few green chilies to eat on the side.
