Soft onion pakora is the tea-time snack I make when the onions are starting to look sad in the drawer. Thin slices, a thickish besan batter, and hot oil. The trick is not too much water in the batter; you want it to cling, not drip off in sheets. I fry in small batches so the oil stays hot and the edges go crisp while the inside stays soft. Salt the onions first and let them sit a few minutes so they release juice that helps bind everything. Chutney or ketchup, your call.
