Pan-Fried Pork Gyoza
By Jordan Lee ·
Gyoza are much easier once you stop chasing perfect pleats. Seal the wrappers well, keep the unused stack covered, and you'll be rewarded with crisp bottoms and juicy centres. I squeeze the cabbage dry because watery filling makes the dumplings burst. Make the dipping sauce before you start folding, then you can eat while they're at their best.
