Soft British scones are the cream-tea kind, barely sweet, meant to carry jam and clotted cream. I keep the dough a bit sticky. Dry dough makes dry scones. Handle it like it owes you money: light touch, quick cut, straight into a hot oven. No twisting the cutter or they rise lopsided. I split them while warm and let the cream melt a little into the crumb. Cold leftovers toast fine the next day with butter.
