Easy Beef Stroganoff

   Prep The Beef** Pat beef strips dry. Season with salt and pepper. Dry meat browns. Wet meat steams. Have everything else measured before you start the pan.

   Sear The Strips

   Heat oil in a wide skillet over high. Add beef in a single layer. Sear 1–2 minutes per side until browned but still pink inside. Work in batches. Transfer to a plate. Do not cook through yet.

   Cook Mushrooms And Onion

   Lower heat to medium. Add butter. Tip in mushrooms and onion. Cook 6–8 minutes until mushrooms release liquid and edges brown. Stir in garlic for 30 seconds.

   Build The Gravy

   Sprinkle flour over the vegetables. Stir 1 minute. Pour in beef stock while scraping the pan. Simmer 3–4 minutes until slightly thick. Stir in mustard and Worcestershire.

   Finish Easy Beef Stroganoff

   Take the pan off heat. Stir in sour cream until smooth. Return beef and any juices. Warm gently 1–2 minutes. Do not boil or the cream breaks. Taste salt and pepper.

   Serve Over Egg Noodles

   Boil egg noodles in salted water per package, usually 7–8 minutes. Drain. Spoon stroganoff over the noodles. Parsley and a pinch of paprika on top if you want color.
