Easy Dal Tadka
By Jordan Lee ·
Easy dal tadka is my default when rice is already on and I need protein without thinking hard. Toor dal cooks soft and mild; the tadka does the talking. I pressure cook most days because waiting for a pot to simmer feels long after work. The tempering goes in last, oil still smoking a little, so the cumin and garlic hit hard. Do not skip the ghee if you can help it; butter is fine, oil alone tastes thinner. Cold leftovers thicken overnight and taste better the next day with a splash of water.
