Easy stuffed bell peppers are my Sunday leftover move when I have cooked rice sitting around. Hollow the peppers carefully so the walls stay thick enough to stand up. I brown the beef first and drain the fat; otherwise the filling gets greasy. A little sauce under the peppers in the dish keeps the bottoms from drying. Bake covered, then uncover so the cheese browns. They smell done before they look done. Let them sit five minutes or the filling spills everywhere when you cut in.
