Soft Blueberry Muffins
By Jordan Lee ·
Soft blueberry muffins are what I bake when I want something that looks bakery-bought but tastes like a regular kitchen. Domes come from a hot oven start, then you drop the heat so the insides cook through without burning. Fresh or frozen berries both work; frozen go in straight from the freezer so they do not bleed into purple streaks. I toss them in a spoon of flour first. That little coat keeps most of them from sinking. No soggy bottoms if you do not overmix and you cool them on a rack instead of leaving them in the hot tin. Eat one warm with butter if you are standing at the counter anyway.
