Soft Overnight French Toast Bake
Soft overnight French toast bake is how I feed a table without standing at the stove flipping slices. You soak thick bread in custard the night before. By morning the cubes have drunk it all in. Mine browns unevenly on top and I like that. A little maple on the plate is enough. Do not skip the overnight rest or the middle stays dry and the edges go weird.

Steps
1.
1.
Prep The Pan**
Grease a 23×33 cm baking dish with butter. Scatter bread cubes in an even layer. Slightly stale bread works better than soft sandwich bread here.
2.
Whisk The Custard
Whisk eggs, milk, cream, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth. No streaks of egg white left. Pour evenly over the bread. Press cubes down gently so they soak.
3.
Chill Overnight
Cover and refrigerate at least 8 hours, up to overnight. The bread should feel heavy and saturated by morning. If a few tops stick up dry, spoon custard over them before baking.
4.
Bake Soft Overnight French Toast Bake
Heat oven to 175°C (350°F). Dot the top with small bits of butter. Bake uncovered 35–40 minutes until the center is set and the top is golden. A knife in the middle should come out mostly clean, not wet custard.
5.
Rest Briefly
Let it sit 10 minutes. It firms up and slices cleaner. Brush with maple if you want shine.
6.
Serve
Dust with powdered sugar if you like. Serve warm with more maple or berries. Leftovers reheat fine but the top softens.

Why this works
Overnight soaking lets custard reach the center of each cube. Day-old bread holds structure instead of turning to mush. Butter dots brown the top. A short rest after baking keeps slices from falling apart.
Substitutions
Challah, brioche, or sturdy white loaf all work. Half-and-half instead of cream. Dairy milk can swap for oat milk if needed, though the bake sets a bit softer. Skip nutmeg if you do not have it. Gluten-free sandwich bread works if it is day-old and not too crumbly.
Storage and reheating
Fridge 3 days covered. Reheat slices at 160°C (320°F) for 10–12 minutes or microwave in short bursts. Freeze baked portions up to 1 month; thaw in the fridge overnight before warming.
