Soft Lemon Drizzle Cake
By Jordan Lee ·
Rainy afternoon and I want cake. Soft lemon drizzle cake is the one I turn to. You cream butter and sugar, fold in eggs and flour, and bake a plain loaf that smells like lemon zest. The magic is the syrup. Mix lemon juice with sugar and pour it over the warm cake so it soaks in and leaves a thin crackly top. Wait until it cools or you burn your mouth. I never wait.
