Sticky Toffee Pudding

   Soak The Dates** Put chopped dates in a bowl. Pour over boiling water and baking soda. Sit 10 minutes. Mash roughly with a fork.

   Make The Batter

   Heat oven to 180°C / 350°F. Grease an 20 cm square or similar baking dish. Cream 85 g butter and 150 g brown sugar. Beat in eggs one at a time. Stir in flour, baking powder, salt, vanilla, and the date mix.

   Bake The Sponge

   Pour into the dish. Bake 30-35 minutes until a skewer comes out clean and the top springs back.

   Cook The Toffee Sauce

   While it bakes, melt 100 g butter with 150 g brown sugar in a pan over medium. Stir in cream and a pinch of salt. Simmer 3-4 minutes until smooth and slightly thickened.

   Soak Sticky Toffee Pudding

   Poke holes in the warm pudding. Pour over about half the sauce. Let it sit 5 minutes.

   Serve Hot

   Cut into squares. Add more sauce and ice cream or cream.
