Easy Aloo Tikki
By Jordan Lee ·
Easy aloo tikki needs dry potatoes. That's the lesson. Boil them in their skins, let them cool fully, even overnight in the fridge, and the patties hold their shape and turn crisp. Wet, freshly boiled potato and you get tikkis that fall apart on the tawa. A little cornflour binds them. The spice is simple: roasted cumin, chaat masala, green chili, ginger and lots of coriander. At a street stall in Delhi they fry them slowly on a huge flat tawa with just a thin layer of oil. Same idea at home. Be patient and don't flip too early.
