Easy Besan Ladoo

Easy besan ladoo has three main ingredients and only one real skill: patience at the stove. You roast the besan in ghee on low heat, stirring the whole time, for 20 minutes or more. Rush it on high heat and the outside browns while the inside stays raw, and raw besan has a bitter, beany taste that sticks to the back of your throat. You'll know it's ready by smell. It goes nutty, almost like roasted peanuts, and the mixture turns loose and glossy. My mother made these for every Diwali and still says the same thing. Let the mix cool down before the sugar goes in, or the sugar melts and the ladoos sag.
