Easy Chicken Cacciatore

Easy chicken cacciatore means hunter's style chicken, and like most Italian home cooking every region and every nonna does it a bit differently. Some use white wine and no tomato at all. Mine is the version I grew up eating: bone-in thighs browned hard, then braised slowly with peppers, mushrooms, a splash of red wine and tinned tomatoes until the meat is falling off the bone. Use thighs. Breasts dry out in a long braise. It's one pan, mostly hands off, and it tastes even better the next day. Serve it with crusty bread, soft polenta or plain pasta.
