   Rest The Yorkshire Batter** Whisk flour and salt in a bowl. Make a well. Crack in eggs. Whisk, then slowly add milk and water until smooth and pourable like heavy cream. Season with a pinch of pepper. Rest 20–30 minutes at room temp.

   Brown The Sausages

   Heat oven to 220°C (425°F). Brown sausages in a skillet 5–6 minutes until colored on most sides. They do not need to cook through; the oven finishes them.

   Get The Oil Screaming Hot

   Pour oil into a metal roasting tin or large ovenproof dish. Set in the oven 10 minutes until the oil shimmers and almost smokes. This is the rise trick. Do not skip it.

   Pour And Bake Easy Toad in the Hole

   Carefully pull the tin out. Lay sausages in the hot oil. Pour batter around them in one go. It should sizzle hard. Return to oven immediately. Bake 30–35 minutes until the batter is tall, deep golden, and set. Do not open the door for the first 25 minutes.

   Quick Onion Gravy (Optional)

   While it bakes, cook sliced onion in butter until soft and browned. Stir in 1 tbsp flour. Add stock and mustard. Simmer until thick. Season.

   Serve Straight From The Tin

   Cut into portions so everyone gets sausage and puffed batter. Spoon gravy over. Eat hot. The middle sinks a little as it cools; that is normal.
