Soft Anzac Biscuits
By Jordan Lee ·
Soft Anzac biscuits, the chewy kind, not the crunchy ones that shatter when you dunk them. Every Australian family argues about which is correct. We like them bendy in the middle with crisp golden edges. There are no eggs at all. Golden syrup and melted butter hold the oats and coconut together, and a spoon of bicarb stirred into the hot syrup makes it foam up. That foam is what gives them their lacy texture. Pull them out of the oven when they still look a bit underdone. They set as they cool. That is how they stay soft.
