Soft Lamingtons
By Jordan Lee ·
Soft lamingtons, sponge squares dipped in chocolate and rolled in coconut, are on every school fete table in Australia. They look simple. The trick nobody tells you is to bake the sponge a day ahead. Fresh sponge is too soft and crumbly, it falls apart the moment it touches the icing and you end up with chocolate coconut mush. Day old cake, chilled for half an hour, holds together perfectly. The icing should be thin, like pouring cream, so it soaks just a few millimetres into the cake and the middle stays soft and pale. Messy fingers are part of it. Use two forks.
