Soft Peanut Butter Cookies
By Jordan Lee ·
Soft peanut butter cookies are the ones I bake when someone asks for something simple and familiar. Creamy peanut butter, not the natural oily kind that separates. Brown sugar keeps them soft; all white sugar makes them snap. I chill the dough 20 minutes if my kitchen is warm so they do not spread into puddles. The fork crosshatch flattens thick dough so the middle cooks, not just for looks. Pull them when the edges set and the centers still look pale; they firm on the tray. Overbake and you lose the soft middle I actually want.
