Easy Egg Curry
By Jordan Lee ·
Easy egg curry is what we cook at home when there's no chicken in the fridge and everyone is hungry. Anda curry, basically. You boil the eggs, make a few slits in each one and fry them for a minute in a spoon of oil with turmeric and red chili, so the whites get a golden skin that soaks up the gravy. Then the masala. Onions go in first and need real time, properly browned, not just soft. Tomatoes after, cooked until the oil starts to separate at the edges. That oil line is how you know it's ready. The whole thing takes about 45 minutes.
