Easy kadai paneer gets its whole personality from one thing, the kadai masala. Coriander seeds and dried red chilies, roasted in a dry pan and crushed coarse. Not a fine powder from a box. You should be able to see the bits of coriander husk in the gravy. The other thing is the vegetables. Capsicum and onion go in as big chunks and get only a couple of minutes on high heat, so they stay crunchy against the soft paneer. If they go limp it turns into a different dish. I make this on weeknights because the whole thing is done in about 35 minutes, and it's lovely with hot rotis.
