Fresh Pico de Gallo
By Jordan Lee ·
Fresh pico de gallo is the snack I chop when chips appear on the counter and I want something better than jarred salsa. Use ripe tomatoes that smell like tomatoes. Seed them if they're watery. Salt draws out juice, so I salt, wait 5 minutes, then drain a little if the bowl looks flooded. Lime juice goes in last. Taste and adjust.
