Oven Honey-Garlic Salmon
I lean on this when I want a proper dinner without standing over a pan. Salmon fillets go into a hot oven under a honey-garlic glaze that caramelizes at the edges. The kitchen smells great and the fish stays moist if you do not overbake it. Pull it when it still looks a touch underdone in the center; it finishes as it rests.

Steps
1.
1.
Heat The Oven**
Heat the oven to 200°C / 400°F. Line a small baking tray with foil or parchment for easier cleanup. Lightly oil the surface.
2.
Mix The Glaze
In a bowl, stir honey, soy sauce, lemon juice, garlic, ginger, oil, pepper, and a small pinch of salt. Taste; it should be sweet-salty with a garlic kick.
3.
Sauce The Salmon
Pat the salmon dry. Place on the tray. Spoon most of the glaze over the fillets, saving a little for the end. Let them sit 5 minutes while the oven finishes heating.
4.
Bake
Bake 12 to 15 minutes depending on thickness. The fish should flake easily and look opaque with a slightly glossy top. If you want more color, switch to grill/broil for the last 1 to 2 minutes and watch closely.
5.
Finish With Reserved Glaze
Warm the reserved glaze briefly in a small pan or microwave and spoon over the hot salmon. Scatter spring onions and sesame seeds.
6.
Rest And Serve
Rest 2 minutes on the tray. Serve with lemon wedges and whatever sides you like: rice, steamed greens, or roasted potatoes make it a full main.

Why this works
High heat sets the glaze quickly so the sugars color without drying the fish. Patting the salmon dry helps the glaze stick. Resting keeps juices in the fillet instead of on the tray.
Substitutions
- Honey: maple syrup.
- Soy sauce: tamari for gluten-free.
- Salmon: trout fillets with a slightly shorter bake.
- Ginger: a pinch of ground ginger if fresh is gone.
Storage and reheating
Fridge up to 2 days. Reheat gently at 160°C / 320°F for about 10 minutes, covered loosely with foil, or eat cold flaked over a salad. Microwaving works but can dry the edges; use short bursts.
