Soft besan chilla is my weekday breakfast when I want something savory and filling without a long prep. Besan (chickpea flour) mixes with water into a pourable batter; aim for pancake thickness, not paste. A pinch of ajwain or cumin stops that raw-flour taste people complain about. Rest the batter 5 minutes so the flour hydrates; if you skip it the chilla can crack. Cook on medium, not ripping hot, or the outside browns before the middle sets. Flip once. Soft center, lightly crisp edges.
