Soft Buttermilk Biscuits
By Jordan Lee ·
Soft buttermilk biscuits are the Southern-style stack I make when toast feels like giving up. Cold butter is the whole trick. You want little pea-sized bits left in the flour so they melt into steam pockets in the oven. I do not twist the cutter when I press down. Twisting seals the edges and they rise short. Brush the tops with a little buttermilk before baking if you like a softer crust. Eat them while they still steam when you pull them apart.
