Soft Creme Brulee
By Jordan Lee ·
Soft creme brulee is the dessert I make when I want that spoon-crack moment without a pastry degree. The custard is just cream, egg yolks, sugar, and vanilla. Bake it low in a water bath so it sets gently, then chill hard before you torch. The sugar crust should shatter, not melt into sticky syrup. A kitchen torch is easiest; the broiler works if you watch it like a hawk. I always burn the first ramekin a little and it still eats fine.
