Soft Idli
By Jordan Lee ·
Soft idli lives or dies by the batter. Soak urad dal and idli rice, grind them separately, mix, and leave the bowl somewhere warm overnight. In the morning it should smell tangy and look bubbly. Spoon into greased molds and steam. The cakes come out pale, springy, and ready for sambar or coconut chutney. Cold kitchens need more patience. Warm ones ferment faster.
