Easy spinach artichoke dip is the snack I bake when people are coming over and I need something hot on the table fast. Squeeze the spinach dry or the dip turns soupy halfway through baking. I use canned artichokes because fresh ones are a project I rarely have time for. Cream cheese should be soft or you get lumps that never smooth out. Bake until the edges bubble and the top browns a little. Tortilla chips are fine; crusty bread is better.
