Soft Key Lime Pie

   Bake The Crust** Heat oven to 180°C (350°F). Mix crumbs, melted butter, sugar, and salt. Press firmly into a 23 cm pie dish, up the sides. Bake 10–12 minutes until fragrant. Cool 15 minutes.

   Mix The Filling

   Whisk condensed milk, lime juice, zest, and egg yolks until smooth and slightly thick. Taste. It should be tart.

   Bake Soft Key Lime Pie Filling

   Pour into the cooled crust. Bake at 160°C (320°F) for 12–15 minutes until the centre just jiggles. Cool to room temp, then fridge at least 4 hours or overnight.

   Whip The Cream

   Beat cold cream, powdered sugar, and vanilla to soft peaks. Do this close to serving so it stays fluffy.

   Top And Serve

   Spread or pipe cream over the chilled pie. Add lime slices if you want. Slice with a warm knife. Keep leftovers cold.
