Soft Mozzarella Sticks
Soft mozzarella sticks are the snack I make when people want fried cheese without a cheese volcano on the stove. The freeze step is the whole secret. Bread them, freeze hard, then fry or bake so the cheese stays put. I use string cheese or a block cut into batons. Double dredge if you want a thicker crust. Marinara on the side is non-negotiable, and they go fast so make more than you think.

Steps
1.
1.
Cut And Chill The Cheese**
Cut mozzarella into even sticks about 1.5 cm thick. If using string cheese, unwrap and pat dry. Cold cheese coats better. Stick them in the freezer 10 minutes while you set up bowls.
2.
Set Up The Breading
Bowl 1: flour. Bowl 2: beaten eggs. Bowl 3: breadcrumbs mixed with Parmesan, garlic powder, salt, oregano, and pepper.
3.
Bread The Sticks
Roll each stick in flour, then egg, then crumbs. For a thicker coat, dip egg and crumbs a second time. Press crumbs on so they stick. Place on a parchment-lined tray.
4.
Freeze Soft Mozzarella Sticks
Freeze the breaded sticks at least 1 hour, or until solid. This is what keeps soft mozzarella sticks from leaking. Overnight is fine. Do not skip this.
5.
Fry Or Bake
Fry: heat oil to 175°C / 350°F. Fry 3–4 sticks at a time, 1–2 minutes, until deep golden. Drain on paper towels. Bake: 220°C / 425°F for 8–10 minutes on a greased tray, flip once, until crisp. Spray lightly with oil before baking.
6.
Serve Hot
Rest 1 minute so molten cheese settles. Serve with warm marinara. Parsley on top if you want. Eat while the crust is still crackly.

Why this works
Low-moisture mozzarella melts slower than fresh. Double breading seals gaps. Freezing firms the cheese so heat crisps the crust before the center runs. Hot oil or a hot oven finishes the job fast.
Substitutions
Panko instead of regular breadcrumbs for extra crunch. Cheddar sticks work but melt faster; freeze longer. Air fryer at 200°C / 400°F for 6–8 minutes, shake once. Gluten-free crumbs and flour if needed.
Storage and reheating
Keep uncooked breaded sticks frozen up to 1 month; cook from frozen, add 1 extra minute. Leftover cooked sticks reheat in a 190°C / 375°F oven 5–7 minutes. Microwave makes them soggy.
